Easy Chicken and Veggie Stir-Fry: A quick, flavorful, and protein-packed stir-fry loaded with tender chicken, crisp veggies, and a savory sauce—perfect for busy weeknights!
Ingredients

Protein & Veggies
- 1 lb boneless, skinless chicken breast or thighs, thinly sliced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas (or snow peas)
- 1 carrot, julienned or thinly sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
Sauce
- ¼ cup low-sodium soy sauce (or tamari for gluten-free)
- 2 tbsp honey (or maple syrup for vegan)
- 1 tbsp sesame oil
- 1 tbsp rice vinegar (or lime juice)
- 1 tsp sriracha (optional, for heat)
- 1 tsp cornstarch (to thicken)
For Cooking & Garnish
- 2 tbsp vegetable oil (or avocado oil)
- 1 tbsp toasted sesame seeds
- 2 green onions, sliced
Instructions: Easy Chicken and Veggie
1. Prep the Sauce
- Whisk together soy sauce, honey, sesame oil, rice vinegar, sriracha, and cornstarch in a small bowl. Set aside.
2. Cook the Chicken
- Heat 1 tbsp oil in a large wok or skillet over high heat.
- Add chicken in a single layer and cook 3-4 mins per side until golden. Remove and set aside.
3. Stir-Fry the Veggies
- In the same pan, add the remaining 1 tbsp oil.
- Sauté garlic and ginger for 30 seconds until fragrant.
- Add broccoli, bell peppers, snap peas, and carrots. Stir-fry 3-4 mins until crisp-tender.
4. Combine & Sauce It Up
- Return chicken to the pan. Pour in the sauce and toss everything together.
- Cook 1-2 mins until the sauce thickens and coats everything evenly.
5. Garnish & Serve
- Sprinkle with sesame seeds and green onions.
- Serve hot over rice, quinoa, or noodles!
