  • 1 lb boneless, skinless chicken breast or thighs, thinly sliced
  • 2 cups broccoli florets
  • red bell pepper, sliced
  • yellow bell pepper, sliced
  • 1 cup snap peas (or snow peas)
  • carrot, julienned or thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated

Sauce

  • ¼ cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tbsp honey (or maple syrup for vegan)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar (or lime juice)
  • 1 tsp sriracha (optional, for heat)
  • 1 tsp cornstarch (to thicken)

For Cooking & Garnish

  • 2 tbsp vegetable oil (or avocado oil)
  • 1 tbsp toasted sesame seeds
  • green onions, sliced

InstructionsEasy Chicken and Veggie

1. Prep the Sauce

  • Whisk together soy sauce, honey, sesame oil, rice vinegar, sriracha, and cornstarch in a small bowl. Set aside.

2. Cook the Chicken

  • Heat 1 tbsp oil in a large wok or skillet over high heat.
  • Add chicken in a single layer and cook 3-4 mins per side until golden. Remove and set aside.

3. Stir-Fry the Veggies

  • In the same pan, add the remaining 1 tbsp oil.
  • Sauté garlic and ginger for 30 seconds until fragrant.
  • Add broccoli, bell peppers, snap peas, and carrots. Stir-fry 3-4 mins until crisp-tender.

4. Combine & Sauce It Up

  • Return chicken to the pan. Pour in the sauce and toss everything together.
  • Cook 1-2 mins until the sauce thickens and coats everything evenly.

5. Garnish & Serve

  • Sprinkle with sesame seeds and green onions.
  • Serve hot over rice, quinoa, or noodles!
